Anchovies with sudachi and thyme

As part of a collection of recipes using citrus, Toklas head chef Chris Shaw presents a flavourful recipe for anchovies with sudachi, a small lime-like fruit of Japanese origin

“I love having anchovies at the start of a meal,” says Chris. “You can buy butterfly ones from specialist suppliers such as The Tinned Fish Market. Sudachi is closer to a lime than a lemon in flavour, but has floral notes that you can find in an Amalfi lemon. If you can't source sudachi, then an Amalfi lemon or very good quality lime would work as a substitute.”
