Beetroot and chocolate cake
There is no chance of a dry cake with this recipe because the beetroot gives both flavour and moisture without being too dominant. Serves 8–10.

A slice of cake in the afternoon is one of life’s great pleasures, but what a disappointment if that cake is dry. There is no chance of that with this recipe because the beetroot gives both flavour and moisture without being too dominant. As I am often a lonely voice singing the praises of beetroot, my advice is to let your guests eat the cake and rhapsodise about it before you tell them what’s in it. The method below uses a food processor, but you can mix by hand if you prefer.
