Brown butter, oat and anything cookies

These cookies take 25 minutes to make from start to finish and you’ll most definitely have everything at home right now, so they’re great for when you just really want something sweet ASAP. You can add anything you want for flavour. I’ve included ground ginger here, but ground cardamom, cinnamon, lemon or zest, crushed fennel seeds, grated fresh root ginger or just vanilla extract would be great too. They work without an egg, too, so if you haven’t got one, don’t stress, they’ll just be more like crisp biscuits than chewy cookies.
