Name: Candied celeriac mejadra
Ingredients: 150ml olive oil; 1 small celeriac, peeled and grated; 1 large onion, peeled and grated; 2tbsp brown sugar; 1tsp ground cinnamon; 1tsp ground cumin; 1/2tsp turmeric; 300g basmati rice; 150g brown lentils; 1 bunch coriander, roughly chopped, to serve

Rhapsody

Mejadra is a Lebanese dish of lentils, sweet spiced rice and caramelised onions. It’s got so much going on and is extremely moreish. This is my spin on it with the addition of celeriac – one of my favourite winter vegetables. Serve as a complete meal or a side dish.
