Oysters with grapefruit-and-gin granita

An elegant, simple combination of unexpected flavours

To drink: As the granita contains gin, you may be happy without wine, but a really crisp, light, well-chilled, bone­ dry white can go very well. A steely Sauvignon Blanc from South Africa or Sancerre, or the driest Cham­pagne (Brut Zero or Zero Dosage), would work, but a good Vinho Verde is spot on: The Society's Vinho Verde 2012, from Portugal, £5.95, The Wine Society (01438 741177).
