Ingredients: 500 g cooking apples (about 4); 150ml cider vinegar; 2 tbsp honey; 6 pork chops, about 300g each; olive oil, for frying; 4 cloves of garlic, crushed; 1 branch of rosemary (no need to chop), plus extra sprigs to serve; large knob of butter; roast potatoes and a green salad

There are few things more pleasing to me than thick pork chops caramelised in a pan and left to rest in their cooking juices. The apple ketchup is easy to make and acts as the perfect foil for the pork fat.
