Roast cod with tomato vinaigrette

Name: Roast Cod with Tomato Vinaigrette | Recipes
Yield: Serves 6
Ingredients: 6 fillets of cod (about 250g each); 400g small vine or cherry tomatoes; 3 tbsp red-wine vinegar; 2 plump new-season garlic cloves, sliced very finely; 400g fine green beans; 1-2tbsp olive oil; Juice of 1 lemon; 1kg new potatoes; 20 basil leaves; 8tbsp extra-virgin olive oil

The vinaigrette is made in advance as can the beans and potatoes

This is one of my go-to recipes, ideal for dinner parties, but I am just as likely to make it for one or two people. The vinaigrette is made in advance and both the beans and potatoes that go with it can be pre-cooked and then revitalised in boiling water while the fish is roasted.
