This is Helen’s riff on the classic dessert of Baklava: a version quite removed from the original, but one that still feels familiar when you’re eating it. The beauty of a semifreddo is that it’s essentially unchurned ice cream, so if you don’t have a machine at home, it’s a great alternative. You can also make it days in advance, so it’s ideal for entertaining!
