Île Flottante (floating island)

There’s no way to sugarcoat it: this recipe requires patience, attention and precision, and will generate piles of washing up. It’s best reserved for dinner parties — many of the elements can be prepared in advance — but these lovely little meringue islands floating on a sea of custard will bring any meal to an elegant close. Some like their îles flottantes cold, but served warm they offer a more luxurious texture. If you favour the former, prepare the cus-tard first so it has a chance to cool down.
