Gordon Ramsay's roast beef recipe with caramelised onion gravy

A weekend wouldn’t feel like a proper weekend without a really good roast lunch, and this roast beef recipe is our absolute favourite, especially when served with a Yorkshire pudding. When cooking, the quality of the ingredients is very important and this is never more so than when roasting meat... buy the best beef you can afford and you are halfway there. Resting is equally essential, so don’t be tempted to cut this short. Be patient and you will be rewarded with juicier, more tender results. If you like, roast the beef on a bed of mixed root vegetables. Now all you need to do is decide which potato recipes to have on the side.
TIP
If you prefer not to marinate the beef before cooking, simply place the garlic/thyme and oil- rubbed joint of beef in a large roasting tray. Continue to sear and roast as in step 3 onwards.
