Chicken thighs and pearled couscous make for a perfect cosy, one-pan weeknight meal that could also be served at a dinner for friends. A play on romesco turns the classic Spanish sauce into more of a salsa-like condiment, which is served alongside, but it would also work well spooned over a piece of roasted or grilled fish. You could serve this with a big green salad, tossed with fennel and topped with shaved Manchego.
