This spring onion (scallion) potato pancake is very aromatic, crispy and yummy. It has a similar taste and texture to hash browns. The potato is first thinly grated then mixed with spices and pan-fried until golden and crispy. Salt is sprinkled on the pancake after it’s done – if the salt is added before, it will make the pancake soggy.
