Walnut and beetroot tart with herb dressing

Name: Walnut and beetroot tart
Ingredients: 700g raw beetroot, peeled and halved (or 3-4 large cooked beetroots); 2tbsp red wine vinegar; 1tbsp olive oil; 320g ready-made all-butter puff pastry; 100g pecorino toscano, or any semi-hard ewe’s cheese or parmesan, plus extra to serve; 1egg, yolk only; 2 tsp runny honey, warmed; 25g walnuts, chopped; ½ garlic clove; ½ banana shallot; Small bunch parsley, leaves only; ½ lemon, zest and juice; 1tsp runny honey; 1tsp Dijon mustard; 4tsp olive oil

This simple autumn tart can be made with ready-cooked beetroot instead of raw, if you prefer. I rather like the vinegary ones you can buy ready-cooked, but it is up to you.
