Method

A 'chilla' is a classic Indian pancake made with chickpea flour. In Italy the same dish is called Socca and in the South of France it's known as Farinata. The thickness of the pancake can be adjusted in order to make it either thin and crepe-like or thicker and more of a flatbread - it's up to you!

The toppings I've given are just suggestions. You can choose whatever you have to hand - fresh tomatoes, basil and caramalised onions work well, as would crushed broad beans and peas with lemon, a dash of olive oil and mint.

The courgettes could be grilled on the BBQ - simply brush them with oil mixed with crushed garlic and the chilli flakes.

If you have any of the coriander pesto dressing left over, it is delicious on top of the flatbreads.

Chickpea flour (also known as besan or gram flour) can be found in most supermarkets or health food shops.
