Ingredients: 225g unsalted butter; 125g caster sugar; 3 egg yolks; 1 lemon, finely grated zest; 350g plain flour, plus extra to dust; 2tsp ground ginger; 100g peeled root ginger, finely grated; 350ml double cream; 350ml single cream; 100g caster sugar; 10 egg yolks; 4 large sticks rhubarb, trimmed and washed; 75g caster sugar; 1 vanilla pod, split; 125ml Crème fraîche
