Ingredients: 1kg mussels; 21/2tbsp extra-virgin olive oil, plus extra for drizzling; 1 small onion, very finely chopped; 3 cloves garlic, finely sliced; 1/4tsp chilli flakes; 6 large tomatoes, peeled, deseeded and chopped; 200ml dry vermouth; 2tbsp finely chopped flat-leaf parsley; 425g spaghetti; 600g tiger prawns, peeled and deveined

Seafood spaghetti baked in a paper bag. The paper parcels are not just for show. The pasta cooks with the seafood and becomes flavoured with the fish.
