A simple Christmas cookie recipe made from shortbread, that can be iced and cut in to myriad festive shapes.

All you need is one simple shortbread recipe and a host of cookie cutters and you can make a joyous Christmas scene of stars, trees and even Santa. The buttery dough can quickly take on another personality if you add chocolate, almond, orange peel and aromatic spices. Use your imagination and add the flavourings that you like. Once made, you can also roll the dough into a log 5cm in diameter, wrap it in plastic and chill until required. Then just slice off thin rounds and bake them. Keep an eye out at good kitchenware shops for Christmas cookie cutters.
