
It's never too early to make the Christmas pudding as it's one of those classic recipes that lasts for years. They last so well, in fact, that we recommend making two at the same time, one for this year and one for next, or as a gift to someone else. Nearer the day, make sure you don't forget the brandy butter! The quantities of this recipe give two puddings; each weighs about 900g and will give 10 fairly small servings. Serve it with a warming glass of mulled wine or a glass of Sauternes, and don't forget the brandy!

If you want more generous servings or leftovers, divide the mixture into two-thirds and one-third and use a larger and a smaller basin. Increase the initial cooking time of the larger one to 7 hours and reduce the smaller one to 5 hours.
