We created the spinach mix from this dish initially as a hot dip, but we couldn’t quite find the right home or it. Then it tried its luck on a pizza collaboration that we worked on with the team from Yard Sale Pizza in London, to no avail, but it finally found a home wrapped up in filo – and here it is!
Before you start working with the filo, it’s good to wet your hands – it will be much easier to shape each börek.
