This dish takes me back to my first attempts at cooking during food tech classes at school. It was one of the first dishes I ever made, and although it wasn’t perfect at the time, it quickly became a favourite. At home, we had a holy basil plant growing in the back yard, along with chillies and other herbs, so I’d always collect fresh ingredients to use. Those fresh flavours made the dish extra special to me, and now I want to share that authentic taste with you.

Cooking tip: Holy basil is different from Thai basil and regular basil as it has a more peppery, clove flavour.
