Classic mango sticky rice in coconut milk

This is one of my all-time favourite desserts – I could eat it every day! It’s not overly sweet, with a lovely balance of creamy, sweet and slightly tangy flavours from the mango. While you can use any ripe mango for this dish, the best option is the honey gold mango from Thailand. That said, it’s not always easy to find, so use whatever is available. In this recipe, I’ll teach you a simple trick for cooking sticky rice in the microwave, without needing to soak it overnight. It gives you the perfect texture for this classic dessert.
